2nos (400gm) crab (cut into pieces)
1 egg (beaten)
1 red chilli
50gm old ginger (chopped)
30gm garlic cloves (chopped)
7 bird's eye chillies (chopped)

Tamarind Concentrate:
30gm tamarind paste, 800ml water

1tsp salt, 2 tbsp sugar

1. Combine the tamarind paste with water, squeeze and reserve the tamarind concentrate.
2. Heat up 5 tsbp oil to fragant chopped red chillies,ginger,garlic and bird's eye chillies. Add in crab pieces, stir-fry until well combined, or until the color are changes.
3. Add in tamarind concentrate and seasoning, bring to boil. Covered and cook over medium heat for about 5 mins. Then thicken the sauce with a little cornstarch solutions. Lastly, add in beaten egg slowly, stir well. Serve hot.
